Broadbean Noodle Soup
This is a tomato based noodle soup with broadbeans or peas can be substituted

1 cup noodles (small with small hole)
1 Medium Onion (finely diced)
Broadbeans (and/or peas) deskinned
3 tbspns Tomato paste
2 Medium Potatoes (diced)

Fry the onion till glassy. Add tomato paste and diced potato with enough water to cook the potatoes. Add Noodles and beans with extra water to desired consistency.

A little chicken stock can be added for extra flavour. Season with salt and pepper

Thick Vegetable Soup
Country of Origin: Malta Name: Kowlata

Any mix of vegetables with a good amount of brassicas (cabbage and cauliflower)
2 tbspns oil
Beans which have been pre-prepared (soaked and drained)
1 small pork chop per person
A little tomato paste
Make up the soup with available ingredients.

Note: For minestrone use pasta instead of pork

This is quite a strong flavoured (due to the brassicas and pork) and thick soup.
